Is it possible (if so please explain how) to set the paypal shipping to be on for some items but off for others?

Use the customdata field to enter for example "no paypal" on items that should not have paypal and then check on your theme page with an if clause for that.

Sorry I am not sure what you mean. They are all for paypal payment but a few do not require shipping - i.e. are digital while the others are printed copies and hence have shipping?

Also how do I get the shipping to be only calculated only once - whatever I do it calculates the shipping for each item added so 10 items = 10 times the shipping - I only want one flat shipping fee. I have tried editing the zenpaypal form and using shipping, shipping2 and handling but nothing seems to work

Seems I missed that the first post refers only to shipping. I think that is not possible with the plugin. I am sorry I am not the author of the plugin and not familiar with it or paypal at all since I never used it myself.
