It's pulling in the actually name of the file for example the file name is:

sampleUpload.jpg so it shows sampleUpload as the title.

Instead of "Mountain biking Bennies Trail, Fall foliage, Wasatch, Utah" like I set it up. Zenphoto pulled in the tags and description just fine.

Am I just missing a simple setting?

It would help if you would post a link to the offending image (the original). A link to your gallery might help as well.

Note I uploaded via FTP directly. There was an issue reported with the admin upload doing this wrong. Please try the nightly build.

I'll try upgrading later tonight, to see if that fixes the admin upload gui.

I'm on version 1.2.8 [4881] (Official Build) btw.

You really need to say that at the beginning. Anyway, we would have told to upgrade then..;-)
